i have a fairly good excuse.  two weekends ago was the mr and my anniversary… then i got caught up in kickboxing, bathroom renovation (just painting, really… let’s not get too excited here), learning hiragana, gardening, vegetarian cooking, and well, you get the picture.  i’ll probably do separate posts today to ca

speaking of pictures, i got a new camera too!

i’ve had my casio exilim for about 6 or so years.  time for an upgrade!  i wasn’t so committed to getting a DSLR since i know all of my pictures will be taken during gatherings and activities, so this seemed like the best fit for me.  and after my first pic, i know i fell in love.

being veggie – week 1

transitioning back to lacto-ovo-pesca-vegetarian has been pretty easy so far, most likely since i’ve done it before while working at mr. sassystitchess’ veggie restaurant in the w. village.  it’s just a little harder now since no one is preparing my food.  ^_^

i did a complete renovation of the refrigerator, stocking up on tofu, veggies, fruits and cheeses (mmm brie).  i even worked in a lot of veggie recipes or psuedo-veggie recipes into our weekly menu.  so far this is what we’ve had since last week:

  • fried tofu – coated in louisiana catfish fry mix
  • pickled japanese cucumber  -  sliced and marinated in red wine vinegar
  • baked ziti w mushroom & red pepper
  • quinoa vegetable stew – with TVP
  • tomato sauce with onion and butter (smitten kitchen) – served with tri-colored pasta
  • pork and tofu sinagang – made with homegrown eggplant and pepper
  • japanese-style potato salad – made with potato, carrot, japanese cucumber, egg and mayo

i’m trying not to limit all of our recipes to veggie only, so that’s why i snuck in the pork and tofu sinagang.  i figured it wouldn’t hurt if i don’t eat the pork part.  ^_^

the real test of my veggie-ism was this past weekend after j’s grappling tourney.  afterwards we were invited over to his instructor’s house for barbecue.  lots of grilled meats and chicken!  i felt bad that i couldn’t eat the spring rolls, which our friend ronald woke up at 5AM to roll in preparation for the event.  it smelled so delicious!  but i stuck to my guns – the sides were more then accommodating for my diet.  there was three different types of poke (cubed & marinated raw fish), boiled peanuts, cheese & crackers, homemade kim chee (delicious!  i need to get the recipe) and japanese-style potato salad.  i loved it so much i had to make some when i got home.

the weekends have not been good to me in the fitness sense… remember that hike two weeks ago that left me with a migraine on monday morning?  well, that migraine did not go away until wednesday night!  4 days of dull throbbing pain plus 1 day of light sensitivity.  ugh.
